Bright, elegant and utterly drinkable — Las Lajas, Costa Rica is a family-made microlot that celebrates clarity, craft and care. Grown on the slopes of the Poás volcano by the Chacón family (six farms, 73 ha) at 1,450–1,500 m with the mill at 1,300 m, this coffee is rooted in organic principles: chemical-free farming, composted pulp returned to the trees, and minimal water use.
The Chacóns blend tradition with innovation — multiple varieties (Caturra, Catuai, Paraiso, Geisha, Pacamara, SL28 and more), painstaking cherry flotation, and carefully managed honey processes (from light to black honey). Small-batch fermentation tanks and gentle mechanical drying ensure consistency and sweetness across lots.
Expect a clean, layered cup with honeyed body, bright acidity and a long, sweet finish — perfect for filter brews that highlight nuance and clarity.
