Santos Pérez Ramírez is a long-time member and leader of ASDEFLOR (Asociación de Desarrollo Flor del Café), a small collective of 31–32 Mam Mayan producers in Chanjón, Huehuetenango. Founded in 2012 after years of informal collaboration, ASDEFLOR was formed to escape exploitative pricing and gain access to quality-driven markets.
Santos farms small parcels of Caturra, Pache, Bourbon, and Catuaí at 1,600–1,800 masl. He processes coffee at his own on-farm wet mill, depulping on harvest day and fermenting up to three days in the cool highland climate. After a single wash, the coffee dries on patios for 5–9 days, depending on weather.
Committed to ecological farming, Santos avoids herbicides, maintains ground cover to protect soil health, and composts coffee pulp with animal manure and sugarcane juice. He has also planted hardwood shade trees to diversify income for future generations. His son Augusto is actively involved, participating in local cuppings and helping evaluate the farm’s coffees.
